I call the place by the roadside at Windsor Forest, Gilbaka City. There is always plenty of this fish at a Roadside Stall there selling fresh fish. Bargains can be had. Today I decided to cook Gilbaka curry with green mango and rice. Gilbaka was purchased from a local West Indian store, green mango was purchased from a local farmers market, and fresh herbs were picked from my garden. Here's my #gilbakacurry with okra and #greenmango served with plain rice. Enjoy! GILBAKA CURRY WITH OKRA AND GREEN MANGO 10-pieces Gilbaka 2-tbsps garlic 1-large onion 1-large tomato 1-large green mango 10-okara 1/4-cup green onion 5-wiri wiri peppers 2-tbsps curry powder 3-tbsps garama masala 27-curry leaves 2-tbsps fish seasoning 1-cup sunflower oil In a bowl mix, onion, garlic, curry powder and garama masala to make into a paste. In a pan heat up oil; add curry leaves and fry for 1 minute; add masala mixture and buja for 3 to 5 minutes or until oil starts to separate from masala. Add fish, turn and coat well with masala; add fish seasoning and give a quick turn. Cover and cook for 5 minutes. After 5 minutes, add okra and boiling water and give quick turn. Cover and continue to cook until okra is soft. When okra is soft, add tomato, green mango, green onion, wiri wiri peppers and boiling water. Give quick turn, cover and continue cooking until water is half dry and fish is cooked. Plate and serve.
4lbs of Gilbaka fish Washed with lime and salt Blended seasoning 5 cloves of garlic 1 hot pepper 2 broad leaf thyme 3 stems of fine thyme 2 green onions Dried ingredients 1 1/2 tbsp green/cumin 2 tsp mixed masala 2 tsp turmeric powder 3 tbsp curry powder Mix dried ingredients with blended seasoning to a paste In a pan with 1 tbsp oil Add the curry paste and cook until nice and brown or until all ingredients are cooked well Add 2 chopped onions Add Gilbaka and mix well Let it cook for a little before adding 5 small tomatoes Add 1/2 cups of freshly squeezed coconut milk Add 5 pieces of mangoes Add 12-14 pieces of Syjan/maringa Add 2 cups of hot water Add 10-12 Ochro Add 1 tsp salt and cook to desired Enjoy with family and friends Music: Wanna Music by: 🤍iksonmusic

Scrub and Wash Gilbaka with lime Add 1 tsp salt Add 1 tbsp green seasoning Blended ingredients 7-8 cloves of garlic 4 mari wirrie peppers 8 stems of fine thyme 3 broad leaf thyme 8 headless green onions Add to a blender with 1/2 cup of water Roughly blend seasoning In a bowl Add 3 tsp of roasted geera/cumin Add 2 tsp duck and goat curry powder Add 1 tsp garam masala Add 2 tbsp turmeric powder Add 2 tbsp Lala’s curry powder Add blended seasoning to the dried ingredients Add 1/2 cup of water and mix to a paste In a pot add 2 tsp oil Add curry paste Cook until it starts sticking to the pot Add 1 onion finely chopped Add 1 tsp salt Add 1/2 of water and cook for 1 minute Add fish and mix with all the ingredients Cook until it’s natural water is evaporated Add green mangoes Add 2 mari wirrie pepper (optional) Add syjan/maringa Add ochro Add coconut milk mixed with water (the milk of 1/2 coconut/combine with water 3 cups) Cook for 5-8 minutes Add cherry tomatoes Cook until fish and mangoes are tender Music: InShot Theme
