Hyderabadi Chicken Dum Biryani is a World famous Dish, it is made using chicken which is marinated then cooked and then is added to cooked rice and again cooked under dum #chickenbiryani #hyderabadichickenbiryani #cookwithfem SPECIAL GINGER GARLIC PASTE SPECIAL ADRAK LEHSUN PASTE LINK 🤍 VISIT MY FACEBOOK PAGE AND LIKE IT AS I AM MORE MORE ACTIVE THERE, CLICK BELOW LINK 🤍 METHOD 1.First we need to make spice powder, for this we need Coriander seeds - 3 tablespoon Fennel seeds - 1 teaspoon Caraway seeds - 1 teaspoon Black peppercorns - 2 teaspoon Cloves - 20 Cardamom - 12 Nutmeg - 1 small piece Bay leaves - 2 Mace - small piece Star Anise - 2 Black cardamom - 2 Cinnamon sticks - 20 small pieces Grind it to a fine powder 2.For making biryani we need Chicken - 1 kilo For marinating we need Special Ginger garlic paste - 3 tablespoon Spice powder - 1 teaspoon Yogurt - 300 gram Lemon juice - 1 tablespoon Cardamom powder - 1/2 teaspoon Red chili powder - 1 1/2 teaspoon Turmeric powder - 1/2 teaspoon Fried and crushed onion - 2 medium sized Few mint and coriander leaves Crushed - green chilies - 1 tablespoon Clarified butter - 1 tablespoon Mix it well and marinate for an hour 3.Soak Basmati rice in water - 1 kilo 4.In a vessel heat oil - 5 tablespoon and add the marinated chicken and cook till it turns 80% tender 5.In another bowl add water - 3 to 4 liter and to it add Salt as required Cloves - 4 Cardamom Cinnamon sticks - 5 Caraway seeds - 1/2 teaspoon Cardamom - 3 Oil - 1 tablespoon Mix it 6.Now add soaked rice and cook till 70% done 7.In a big bowl add rice layer then chicken layer so on as shown and garnish with fried onions,mint and coriander leaves,clarified butter,saffron soaked milk,garam masala powder etc 8.Then keep it under dum for 30 minutes under a tawa. 9.Serve hot with raita or brinjal chutney SPECIAL ADRAK LEHSUN KA PASTE/ SPECIAL GINGER GARLIC PASTE 🤍

Hyderabadi Chicken Dum Biryani Recipe | Hyderabadi Restaurant Style Chicken Biryani | How To Make Chicken Biryani | Authentic Hyderabadi Chicken Biryani Recipe | Chicken Dum Biryani | Chicken Biryani Recipe | Hyderabadi Chicken Biryani | Spice Eats Chicken Biryani Ingredients for Hyderabadi Chicken Biryani : (Tsp-Teaspoon; Tbsp-Tablespoon) - Chicken - 1 kg (large pieces with bones) For marinating the Chicken : - Red Chilli Powder - 5 tsp - Coriander powder - 4 tsp - Salt - 2 tsp - Ginger garlic paste - 4 tbsp - Green cardamom powder (only seeds & strained ) - 3/4 tsp - Shah Jeera whole - 1 tsp - Cloves ( Lavang) - 10 pcs - Cinnamon ( Dalchini) - 8 nos - Onions, fried crisp & crushed - 7-8 tbsp or 4 medium onions - Coriander leaves, fine chopped - 1 cup - Mint leaves (Pudina) , rough chopped - 1/2 cup - Lemon juice- 1 lemon ( 3 tsp) - Green chillies, crushed - 5 nos (2 tbsp) - Beaten/ whisked curd - 300 ml - Oil ( in which onion was fried), cooled - 1 cup For cooking rice & Dum cooking : - Basmati Rice - 750 gms - Shah Jeera - 3/4 tsp - Green cardamom - 4 - Cloves - 4 - Cinnamon- 2 pieces - Salt- 2 1/2 tablespoons - Saffron strands soaked in warm milk - Water to boil the rice- around 2.5 litres - Onions, sliced fine & fried crisp (birista) - 2 medium (4 tbsp) - Mint leaves - around 10- 15 leaves - Water to be taken out after boiling rice - 1/2 cup - Ghee- 1 tbsp - Foil to use for Dum cooking Preparation : - Clean & wash the chicken. Strain the water completely. - Slice 4 medium onions & fry in oil till golden (birista). Remove & once cool, crush it with your hands. - Reserve 1 cup of this oil that was used for frying the onions. - Take out seeds from around 15 green cardamoms. Make a powder of it and strain it to give 3/4 tsp powder. - Fine chop 1 cup coriander leaves, rough chop 1/2 cup mint leaves & roughly crush the 5 green chillies. To marinate: - Take the heavy bottom pan that will be used to cook the Biryani on DUM and add the chicken pieces. Now add all the items for the marinade. Mix well, cover & set it aside for 2 hrs. One hour after marinating the chicken (or one hour before cooking the rice):- - Take 1/2 cup of warm milk & soak few strands of saffron. Mix it with a spoon. 30 mins prior to cooking the rice:- - Wash & soak the Basmati Rice for 30 mins. - Slice 2 medium onions & fry in oil till golden (birista) - Take out around 10-15 mint leaves. Process: - Take a heavy bottomed pan or hot pot & add around 2.5 litres of water to cook the rice . Place it on high heat to boil the water. - You may include the water in which rice was soaked in this 2.5 litres for enhanced flavour & taste. - While the water is coming to a boil, add 3/4 tsp Shah Jeera, 4 Green cardamom, 4 Cloves, 2 Cinnamon pieces. - Add 2 1/2 tablespoon Salt - Stir it well to dissolve the salt completely. The water must be very salty. - Once the water is boiling add the strained basmati rice & stir it well. - Continue to boil it on high heat, stirring few times very gently to not break the rice. - Exactly after 5 minutes on high heat, start scooping out the half cooked rice with the slotted ladle & spread it on the arranged chicken in the heavy bottomed pan/ Lagan . Continue doing that till half of the rice is taken out. - Now spread half of the birista & all of the mint leaves. - Spread out the balance rice on top of the 1st layer of rice. - Lastly take out 1/2 cup of the hot rice water & add 1 tbsp ghee in it. Mix it well & pour it uniformly on the rice. - Now, seal the pan with foil to cover it completely . Fold it in & place the lid on top. - Place this pan directly on heat for 10 mins on high heat. Place a bowl filled with water on top of this for weight. - After 10 mins, take a heavy tawa & shift the pan onto the tawa to cook on DUM. - Keep on high heat for 2mins & lower the flame to low & cook on DUM for 30 mins. - Switch off heat and remove the tawa but not the bowl. - Allow it to rest for an hour. This glorious delicacy is a staple for the locals and the go-to dish for the tourists. Hyderabadi Biryani is characteristically distinct from its popular counterparts because of its distinct aroma, taste, texture and the mode of preparation. With the essence of Turkish, Mughlai and Arabic influences in it, the Hyderabadi Biryani has been an integral part of the Hyderabad’s culinary tradition since a long time. In this culinary exploration, we have set out to savour the dazzling aura of this majestic dish at some of the most famed destinations across the city. We are happy to be accompanied by our gracious host Sankalp Vishnu who is an acclaimed food critic and food expert. We tried Hyderabadi biryani at two eminent places-The Lucky restaurant and the Bawarchi restaurant. Our intention was to understand the nuances or fine tuning of the variations in the Hyderabadi biryani as adopted by these joints. Our first stop was the Lucky restaurant that serves one of the best versions of the Kachi Gost Ki Biryani. We got the opportunity to witness the making of a batch of Hyderabadi Biryani at their wonderful, aromatic kitchen. The seemingly easy procedure entails an astute understanding of the dynamics of its cooking, perseverance and dexterity. The genial owner for Lucky restaurant walked us through the process sharing all the details of their prized preparation. We then tried the Nalli Biryani along with some other delectable meaty wonders. The feast ended with the lusciously amazing Khubani ka Meetha a dessert that’s exclusive to the city. The next day we went to the acclaimed Bawarchi restaurant to try their version of the Hyderabadi Biryani. In recent years it has emerged as favourite destination for the same. The beautifully done Chicken Biryani was worth all the reputation. It ticked all the boxes of parameters that make the magic of a biryani work. A distinct feature of the biryani here was the pleasantly notable presence of the shah jeera flavour in it. Here we also tried the Hyderabad famous Double Ka Meetha and the Kaddu ka kheer. The latter one was the best. While winding up this Hyderabadi biryani trail we couldn’t but wonder at the flamboyant stature of this apparently royal dish that rules the heart of the masses in and beyond this city. Heat oil in a deep frying pan and deep fry the onions for 5 mins on medium heat. The onions should turn brown. Ensure that the onions don’t get burnt. Keep the fried onions aside for 15 mins to become crispy. 3. Wash and soak the Basmati rice for 20 mins. 4. Heat ½ Cup of water in a saucepan, bring it to a boil. Add it to the saffron, mix well to prepare the Saffron Water. 5. In a biryani pot, take the cleaned and washed chicken. 6. Add Kashmiri Chilli Powder, Cumin Powder, Garam Masala Powder, Salt, Cinnamon, Cardamom, Black Cardamom and Bay Leaf. Mix the chicken well with all the spices and spice powders. 7. Add the slit green chilli, ginger garlic paste, ginger, mint leaves, whisked curd. Mix well. 8. Add half of the fried onions to this and also add 1 tbsp of ghee. Mix well and marinate the chicken for 1 hour. 9. In a pan bring 5 cups of water to a boil and add the cardamom, black cardamom, cinnamon and bay leaf, cumin seeds, salt and coriander leaves. 10. Add the soaked rice to the boiling water, add 2 tsp of oil, cover and cook for 5-7 mins or until the rice is ¾ done. 11. Using a strainer or a muslin cloth, filter the rice and spread it over a wide plate or pan. 12. Take the biryani pot in which the chicken is marinating, add 75% of cooked rice on top of the marinating chicken. 13. Add the 50 % remaining fried onion, 50% of the saffron water, and 1 tbsp of ghee on top of the rice. 14. Add the balance rice on top of this. Add the remaining saffron water, 1 tbsp of mint leaves, 1 tbsp of coriander leaves, balance fried onion and 1 tbsp of ghee. 15. Line the sides of the pot with chapati dough or cover the pot with aluminium foil to prevent steam from escaping the pot. Close it with a lid to dum cook the biryani. 16. Place the pot on a stovetop, and cook on high heat for 5 minutes. Remove the pot from the stove. 17. Now Place a Tawa on the stove, place the biryani pot on top of the Tawa and dum cook for 35 minutes on medium heat. 18. Full written recipe for Chicken dum biryani For rice: Ingredients: • Basmati rice 1 kg • Ghee 1 tsp • Whole spices: 1. Jeera (cumin seeds) 1 tsp 2. Dalchini (cinnamon stick) 1 inch 3. Laung (cloves) 5-6 nos. 4. Chakri phool (star anise) 1 no. 5. Javitri (mace) 1 no. 6. Moti elaichi (black cardamom) 1-2 nos. 7. Kali elaichi (black peppercorns) 4-5 nos. 8. Hari elaichi (green cardamom) 2-3 nos. • Fresh coriander leaves 1 tbsp (chopped) • Fresh mint leaves 1 tbsp (chopped) • Salt to taste Methods: • Set water for boiling in a stockpot, add ghee, whole spices, freshly chopped coriander and mint leaves & salt to taste, mix and add the soaked basmati rice, boil & cook the rice until its 90 % done. • Strain the rice and spread it over a large size plate and cool down to room temperature. For marinating chicken Ingredients: • Chicken 1 kg • Salt to taste • Lemon juice 1 tsp • Curd 400 gm • Red chilli powder 1 tbsp • Turmeric powder ½ tsp • Ginger garlic paste 2 tbsp • Green chilli paste 1 tsp • Fried onions ½ cup • Biryani masala 2 tbsp • Fresh mint leaves a handful (roughly chopped) • Fresh coriander leaves a handful (roughly chopped) • Ghee 2 tbsp Methods: • Wash the rice grain with water 4-5 times or until the water is clear enough, soak it in fresh water for 45-50 minutes. • For marinating chicken, take a mixing bowl and add the chicken pieces, further add all the remaining ingredients of marinade, mix well and keep it marinated for at least 1 hour. For biryani Ingredients: • Ghee 2 tbsp • Marinated chicken • Cooked rice • Fresh coriander leaves • Fresh mint leaves • Fried onions • Saffron infused milk (soak saffron in warm milk) • Live charcoal + ghee Methods: • Set a wok or a kadhai on medium heat, add ghee and the marinated chicken, stir and cook the chicken until it starts to bubble and the curd leaves oil, this process might take about 10-12 minutes depending on the size of chicken, cook the chicken up to 90%. • Once the chicken is cooked up to 90%, remove it in a bowl. • Now, in the same pan that was used for cooking chicken, spread a layer of cooked rice, then add freshly chopped mint & coriander leaves, some fried onions and pour some saffron infused milk. • Now, over the rice, spread a layer of cooked chicken along with its masala, repeat the addition of fresh coriander, mint leaves and fried onions, now, layer the remaining cooked rice over the chicken and place a live burning charcoal in a bowl and pour ghee over it, cover and smoke for 5 minutes to impart smoke flavour in biryani. • Now as the biryani is smoked, add some more freshly chopped mint & coriander leaves, some fried onions, pour some saffron infused milk and pour some more ghee for the extra flavour or you could also use oil that was used for frying onions. • As the layering and final addition of ingredients for the biryani is done, we need to give a dum, by placing a lid on the wok and seal the edges of the wok with a dough, and keep it on very low flame for 30 minutes, make sure you use a heavy bottom wok or place a tawa underneath to avoid burning of biryani. • The biryani is ready to be served, serve it hot with some papad, chilled raita or some mirch ka salan along with it. Sprinkle fried onions, and add dissolved saffron strands in milk , then add ghee (optional), kewra water, rose water and put the lid on which is lined with sticky dough for dum. First cook it on high for first 4-5 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 25 to 30 min and switch off the flame. After 40 minutes this is ready for opening the seal of the lid. Take a wide sauce pan, pour some oil and add 6 medium sized onions. 2. Fry them till they are nice and brown. To marinate the chicken: 1. Take 2 kg chicken in a bowl (Ratio 2:1. 2 kilos of chicken for 1 kilo of rice) 2. Add lemon juice and little bit of salt. Rub into the pieces and set it aside for 10 - 15 mins. 3. Next, for the main marination, in a bowl add 2 cups thick yogurt, 3/4 tsp turmeric powder, 2-3 tsps red chili powder, 2 tsps cumin powder, 2 tsp coriander powder, 1 tsp garam masala and little salt. Mix well. 4. To this add 5 finely chopped green chilies, 1 cup chopped mint leaves, 1 cup chopped coriander leaves. Mix everything together. 5. To the chicken pieces, add 3 tsp ginger garlic paste,3/4 fried onions and the entire yogurt marination. 6. Rub everything into the chicken pieces and make sure all the pieces are coated with the marination. 7. Let it marinate for 3-4 hours minimum. To cook the rice: 1. Take 1 kg of basmati rice in a bowl.P our water. 2. Let it soak in water for 30 minutes. 3. Take a pot of water. Let it boil. 4. Add the soaked rice. 5. To this,add the whole spices - bay leaf, star anise, cinnamon, cloves, cardamom, peppercorns and little salt for seasoning. Cook till the rice is about 3/4th done. 6. Strain the water before the rice is completely cooked. To cook the biryani: 1. Take a pot. Add ghee and little oil. 2. Add whole spices - bay leaf,star anise,cinnamon,cloves and cardamom. 3. To this, add the marinated chicken pieces and cook it for 5-7 minutes. 4. Heat the tawa and place the pot on top of it. 5. To the chicken, add mint leaves and coriander leaves. 6. Add the cooked rice and add saffron milk (soak saffron strands in warm milk) 7. Garnish it with fried onions. Add mint leaves and coriander leaves. 8. CHICKEN DUM BIRYANI | चिकन दम बिरयानी - One of the most requested recipes on my channel, here's my recipe for making Chicken Dum Biryani at home. 🍽️𝗔𝗠𝗔𝗭🥘𝗡 𝗦𝗛🍳𝗣 🍽️ RB Store - 🤍 Kitchen Appliances - 🤍 Knives I use - 🤍 * 𝗖𝗹𝗶𝗰𝗸 𝗵𝗲𝗿𝗲 𝘁𝗼 𝘀𝗶𝗴𝗻 𝗺𝘆 𝗽𝗲𝘁𝗶𝘁𝗶𝗼𝗻 - 🤍 * ⏩𝓢𝓾𝓫𝓼𝓬𝓻𝓲𝓫𝓮 𝓱𝓮𝓻𝓮: 🤍 * 𝗖𝗵𝗲𝗰𝗸 𝗼𝘂𝘁 𝘁𝗵𝗲𝘀𝗲 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 𝘁𝗼𝗼: Preparation Time: 30 minutes + 3 hours Marination Cooking Time: 40 minutes Serves: 4 Cuisine: Indian Course: Main Course Ingredients: 🍛 For Rice 1 kg Basmati Rice, washed and rinsed 4 Cloves ½ inch Cinnamon 2 Green Cardamom pods Salt to taste ¼ cup Ghee, melted For Marinade 1 kg chicken with bone, cleaned and washed 4 medium onions, sliced 2 tbsp barista/fried onion 1 tbsp saffron water 2 sprigs of mint leaves ½ cup curd, beaten 1 tsp coriander powder 1 tbsp degi chilli power ½ tsp green chilli paste 1 tbsp Ginger Garlic paste 3-4 green chillies, slit Salt to taste Other Ingredients 1 tbsp ghee ¼ cup water ½ cup milk 2 tbsp saffron water 1 tbsp ghee Few mint leaves 1 tbsp barista Salt to taste 2 tsp saffron water ½ tsp rose water Drop of kewra water Raita Process ♨️ For marinade • In a mixing bowl, add chicken and marinate with all the ingredients. • Let the chicken marinade preferably overnight or for minimum 3 hours. For Rice • Let the rinsed rice rest for 20 minutes. • Heat water in pot, add ghee and salt. • Add in cloves, cinnamon and green cardamom. Add rice and let it come to a boil. Immediately lower the flame and cook on low flame for 80%. For Biryani • In a heavy bottom pan, add ghee and marinated chicken. Cook for about 7-8 minutes. • In another pan, layer the biryani. Add rice, chicken and then top it off with rice. Add in the chicken gravy on top. • In the chicken’s pan, add water, milk, saffron water, ghee, mint leaves, barista, salt and coriander leaves. Add this jhol in the biryani. • Add some more saffron water, rose water and few drops of kewra water.
