Full written recipe for Rava dosa Prep time: 10-15 minutes Cooking time: 5-6 minutes (for one dosa) Serves: 12-15 dosas Dosa batter Ingredients: Rice flour | चावल का आटा 1 cup Upma rava | उपमा रवा 1/2 cup Refined flour | मैदा 1/4 cup Cumin seeds | जीरा 1 tsp Black peppercorns | काली मिर्च 7-8 nos. (crushed) Ginger | अदरक 1 tsp (chopped) Green chillies | हरी मिर्ची 2-3 nos. (chopped) Curry leaves | कड़ी पत्ता 1 tsp (chopped) Salt | नमक to taste Water | पानी 4 cups Onions | प्याज़ as required (chopped) Ghee / oil | घी / तेल as required Method: In a bowl add all the ingredients and mix well, further just add 2 cups of water initially and mix well, make sure there should be no lumps, once mixed well further add the remaining water and mix well, now rest the batter for atleast ½ an hour. Once rested well for half an hour, your dosa batter is ready, for getting crisp and smooth dosa its suggested to use a proper non-stick dosa pan if not you can use any other well-seasoned pan. Set a non-stick dosa tawa on high heat, check the temperature by sprinkling some water it should evaporate, once the tawa is hot enough add some chopped onions all over the tawa, now stir the batter once and pour it all over the tawa. As you’ll pour the dosa batter will form a mesh like texture, this texture is really important for the dosa an that’s how it makes different from the rest of the dosas. Make sure you do not over pour the dosa batter or else intead of become crispy it'll become soggy. Once you pour the batter lower the flame and let the dosa cook on medium flame, pour some ghee or oil as per your preference. As and when the dosa is cooking on medium flame, the moisture from the dosa will start to evaporate and that’ll make the dosa crisp. Cook until the dosa is crisp & golden brown in colour. It will spread itself. Cook it till you see air pockets on the top. Step 5: To make dosa, spread the batter evenly on a pan, in a circular motion. Add some oil to the top. Step 6: To get a crisp dosa, keep the batter thick, for a flaky one, keep it very thin with more oil. Roll the dosa with your hands and it’ll be ready. Step 7: To make the uttapam, add the batter in one place and don’t spread it around. Step 8: After adding the batter, wait for 10 to 15 seconds and add your favourite toppings. Mix well and store. Take 1 cup dosa mix. Add ½ cup butter, 1 cup water and mix well to make a smooth consistent batter. Set the batter aside for 15 minutes. Heat a pan or dosa tawa till medium hot. Add a drop of oil and wipe the tawa with a cloth. Sprinkle a few drops of water on the pan and wipe the tawa with a cloth. Spread a dale full of the batter on the pan in a circular motion beginning from the centre outwards. Allow to crisp. Add around a tablespoon of oil around the edges and all over the dosa and allow to crisp. For Coconut Chutney, in a mixer jar, put grated Coconut, Ginger, Green Chili, Roasted Grams, Salt, Curd & add Water & grind them. In a pan, put Oil, Mustard Seeds, Cumin Seeds, Dry Whole Red Chili, Curry Leaves & Asafoetida & give Tadka to the Chutney. For Dosa Batter, take some Semolina & Wheat Flour. Mix them & grind them together. Put Curd & Salt in it & add Water to make batter. Cover it & keep it aside. Put Baking Soda in batter & add Water if required. Worry not we have a dosa recipe that is Instant as well as crispy and super delicious Rava Masala Dosa. Rava' is the South Indian word for 'semolina'. 'Dosa' is a traditional thin 'South Indian crepe'. So Rava dosa' translates to 'semolina crepes'. Recipe Details Serves 1-2 People Cooking Time - 15 Mins Preparation Time - 10 Mins Dish Type - Snacks Ingredients: For Dosa Suji – 2 cups Besan – 2 tbsp Wheat flour – 2 tbsp Dahi – 1 cup Salt – as per taste Water – 1 cup Baking soda – 1 pinch Oil – 1 tsp For Aloo Masala Coconut oil – 1 tbsp Mustard seeds – 1 tsp Dhuli urad dal – 1 tsp Whole dry red chili – 1 number Slit green chili – 2-3 nos Sliced onion – 1 cup Curry leaves – 8-9 nos Salt – as per taste Turmeric – 1 tsp Red chili powder – ½ tsp Boiled crushed potato – 2-3 nos Method: For Dosa In a grinder put suji, besan, wheat flour, and grind it into a fine powder, then transfer this into a bowl and add dahi, salt, water, and mix it well and keep it aside to rest Now add baking soda and mix it well. In a dosa pan heat oil and then sprinkle the water and maintain the temperature. Pour one full ladle of batter on a pan and spread it in a round shape and pour a little bit of oil from the sides and increase the flame. Now put aloo masala on top of the dosa and roll it, and repeat the process again. Now your suji masala dosa is ready to enjoy, service with tomato chutney. For aloo masala In a pan heat coconut oil, add mustard seed let it crackle, now add dhuli urad dal, red dry chili, slit green chili, sliced onion, curry leaves and sauté it completely. Now add salt, turmeric, red chili powder, and lightly sauté everything, then add boiled crushed potato, a little bit of water, and mix everything and cook for more than 2-3 minutes. Now keep the aloo masala in a bowl and set it aside to cool it down. Enjoy this super crispy dosa for breakfast, lunch, or dinner! (Ragi dosa, Ginger Chutney) Makes 8nos Ingredients: Ragi flour (finger millet) - 1cup Rice flour - ¼ cup Semolina - ½ cup Curd - ¼ cup Ginger finely chopped - 2tsp Green chilli finely chopped - 2tsp Cumin - 1tsp Water - 1¼ cup Salt - ¼ tsp Ginger Chutney (inji thuviyal or állam pachadi) Oil - 2 tbsp Channa dal - 1tbsp Urad dal - 1 tbsp Dry red chilli - 4nos Oil - 2 tbsp Ginger sliced - 1 cup Tamarind (seedless) - a small piece Salt Jaggery - 1tsp Water - ¼ cup (approx) For tempering: Oil - 1tbsp Mustard seeds - 1tsp Curry leaves - a handful Method: Heat oil and add channa dal, urad dal and dry chilli. Roast them on low heat till dal turns light brown. Let this cool a bit and then dry grind it coarsely. In the same pan add some oil and then add chopped ginger to it. Cook on low heat for 3-4 mins. Now add the sautéed ginger to the coarse mixture along with jaggery, salt and a dash of water. Grind to a fine thick paste.
