Join my online French cooking classes 👨‍🍳: 🤍 this video will show you how to make a French Fish soup, bouillabaisse style from scratch. It is a step by step video with easy to follow instructions. If you like fish this is a dish not to miss. for the best results you will have to make your own fish fumet or stock and use 4 or 5 types of fish. if you cannot make your own fish stock don't worry as this recipe can also be made using an of the shelf fish stock. As a side note, if you want to have the soup thicker you can add 1 boiled potato in the soup before blending and filtering it. Make sure to use a sieve with medium size holes and if you can, ideally use a manual vegetable mill which will extract the juices as well as some of the fish flesh. Ingredients you need to make 1 liter of soup (enough for 4 starter size bowls or plates). for 2 liter of soup, just multiply all proportion by 2. (except the ingredients to make the Aioli) 1 liter of fish stock fresh or or of the shelf (video link below) 🤍 for the soup: • 800 grams of a mix of small Rock fish cut into chunks and 200 grams of fish filet. 🔪 BROWSE MY KITCHENWARE - 🤍 ❤️ SUPPORT THE CHANNEL - 🤍 Today, we are making Milky White Fish Soup, or what we call Naibai Yutang (奶白鱼汤). It got its name from the white look, the milky taste, and the creamy consistency. But there are no dairy products added to this soup. The recipe is extremely simple, and there is only one secret you need to know in order to turn the fish bones and water into this fabulous broth. 🥢PRINTABLE RECIPE - 🤍 INGREDIENTS 6-8 scallion 2-3 inches of Ginger 3 tbsp of Chinese cooking wine (Amazon Link - 🤍 4 tbsp of Cornstarch 12 oz of fish bones 3 oz of bones needs 1 cup of water 4 cups of water 3/4 tsp of salt or to taste 2 tbsp of oil to fry the fish bones INSTRUCTIONS Chop the fish bones into 1.5-inch-wide pieces. Any type of white fish that has a mild taste will work beautifully. This recipe uses minimal seasonings to highlight the natural flavors of the fish. So, the freshness matters, do not use frozen sources. Set the fish bones aside. Cut 6-8 scallions into 1.5-inch-long pieces. Slice 2-3 inches of ginger thinly. Rub the fish with 2/3 of the scallion, 2/3 of the ginger, 3 tbsp of Chinese cooking wine, and 4 tbsp of cornstarch for 5 minutes. Be sure to wear gloves, otherwise, you might get hurt by the sharp bones. Rinse the starch off with running water. Discard the aromatics. Drain completely. Dry the bones with paper towels. Set it aside. Turn the heat to high and heat the wok until smoking hot. Add a drizzle of cooking oil and toss in the fish bones. brown the fish until golden brown. Add the reserved scallions and ginger. Pour in 4 cups of boiling hot water and keep the heat on high the whole time. When the liquid is whitened, put on the lid and keep the heat at medium for 6-8 more minutes. Use a sieve to get rid of the solid bits. season the fish broth with salt and pepper. Greek-Stye Lemony Fish Soup: Psarosoupa


Get this recipe with exact measurements here: 🤍 Serves 6: 2 ½ -3 pounds white fish (red snapper, cod, monkfish…) scaled, and intestines removed 7-8 cups water 2 potatoes cubed 1 small onion, chopped 2 carrots, chopped 2 celery stalks, chopped 10-15 black peppercorns 1/4 cup olive oil Salt, to taste ½ cup rice For the Egg-Lemon Sauce: 2 egg yolks 1/4-1/2 cup fresh lemon juice, or more 1 tablespoon cornstarch ¼ cup olive oil In a large pot, place the water, vegetables, fish, olive oil, peppercorns, and 1 teaspoon salt and bring to a boil. Reduce to a simmer and cover with the lid. Simmer for 20 minutes. Using a slotted spoon, carefully transfer the cooked vegetables and fish onto a platter. Strain the broth through a strainer to catch any fishbones. Rinse the pot. Transfer the strained broth back into the pot and add the rice with half a teaspoon of salt. Bring to a boil. Cover the pot and reduce to a simmer and cook for 15 minutes or until the rice is fully cooked. Carefully remove the bones and skin from the fish and discard them. Cut the fish into chunks and set aside in a bowl. Check the vegetables and remove any fish bones or skin from them. To make the egg-lemon sauce, combine all of the ingredients in a small mixing bowl and whisk together until smooth. Add 1-2 cups of the hot soup broth to the lemon sauce and whisk well. Add the fish chunks and as many of the cooked vegetables that you want back into the pot along with the egg-lemon sauce. Cook through over medium heat 3-4 minutes. The soup will continue to thicken as it sits. Taste and adjust seasoning to suit your taste. Add more lemon juice if desired. Serve immediately with some toasted bread. Enjoy! Recipe obtained from the very north of Norway , excellent fish soup! -recipe below: Norwegian fish soup, Ingredients: • 2.5 tablespoon of flour • 2.5 tablespoon of butter • 4-5 cups of fish stock (I use fish stock cubes by Knorr) • ½ Fennell • 1 thin or ½ of a normal size leek, chopped • 1 medium potato • 1 medium carrot • 2 handful of shrimps • fish pieces – various types like for a fish pie • mussels • ½ glass of double cream • fresh parsley chopped • 2 tablespoons of double cream • saffron • ½ of medium fennel COOKING: melt butter in the bottom of the saucepan add flour and stir add fish stock, stirring, bring to boil, add fennel add sliced carrot, potato and leek – add saffron, crush in your fingers – a good pinch boil for 5 min add shrimps, fish and mussels simmer for 5 min To serve add parsley, salt (careful with salt) , freshly ground pepper and sour cream or double cream (if desired)
