It's a HOMEMADE GOOSEBERRY JAM exclusive! The intention for this was to make a jam using wild blueberries but I quickly realized how hard it was to find them at my local farm stands, and they were crazy expensive to boot. Although we did end up making one glorious WILD BLUEBERRY PIE, my sights soon turned towards a more unusual offering - gooseberries. In hindsight, I couldn’t be happier because this GOOSEBERRY JAM is quite remarkable. Here’s what makes this GOOSEBERRY JAM so fabulous: GOOSEBERRIES – Pronounced /ˈɡuːzbɛri/, gooseberries are quite distinct in both appearance and taste. Their skin is marked by a somewhat transparent veining that makes them look like dinky watermelons. Their flesh, though sweet, has a pleasing tartness. Head HERE to learn more about them. TOPS AND TAILS - This recipe is time-consuming, no two ways about it. Gooseberry recipes require something called “topping and tailing”, where we trim the top, the stem and also the tail, where the flower once was. If you’re a type-A personality like me, the process of topping and tailing becomes a quest. It took close to 3 hours to trim all of the berries for this recipe, as I was relentless in removing those stems and tiny black specks from each and every one. Doing so produced a uniformly coloured and textured jam without blemishes. WEIGHING IN – For the first time ever, I used a kitchen scale to weigh the fruit rather than simply adding the berries using liquid or dry measures. This is a much better way of determining the true volume of the fruit. I also weighed my sugar using the same method, and suggest you do the same. FRUIT TO SUGAR RATIO – I followed Lucy’s suggestion and prepared this jam using a 3:2 ratio of fruit to sugar. Even though the quantity of sugar may seem less than what we’re accustomed to, the finished jam exceeded my expectations. It ended up being perfectly sweetened yet still allowed the flavour of the berries to shine through. It also set just right, hitting that sweet spot of firmness that can still be spread easily across a piece of toast or onto a cracker. FLAVOUR BOOST – Topping and tailing five pints of gooseberries gives you time to think about lots of things: How many berries are in a pint? Who should I give a finished jar to? Why am I making jam on the hottest day of the year?  What should I add to the pot to give the jam a bit of a flavour boost? I think I nailed that last question with the addition of ginger and lime juice. In a way, I’m thankful for the simplicity of it all; you can’t help but marvel when something ends up tasting so phenomenal and uses only 5 ingredients. CONSISTENCY IS KEY – The actual cooking of the jam is perhaps the most important step, and again, we’re looking for that sweet spot - the jam needs to thicken enough to set without overcooking. Thankfully, gooseberries contain high levels of pectin, so this happens in relatively short order, after a hard boil of about 25 minutes. We recommend testing the consistency of your jam using the frozen side plate method. When you think your jam is done, add a spoonful of the jam onto a frozen plate. After about two minutes tilt the plate. If the jam stays in place, so far so good. Then push the jam gently with your finger and if the top wrinkles up, your jam is done. If not, cook for an additional 5 minutes and repeat the process. JOY TO BEHOLD – Something absolutely amazing happened during the cooking of this jam and it truly was a joy to behold; these vibrant green berries slowly cooked down to reveal a lovely pink, then deep rose-coloured hue. In fact, I was thinking the jam looked way too dark, and it wasn’t until I started ladling it into the jars that I first saw its true colour. The colour of gooseberry jam is like no other. FINISHING TOUCHES – As with all jam recipes, the key indicator of a successful processing is waiting for the pop – where the lids contract on the top of the jars to form a seal. All of my jars popped without incident. Once completely cooled I thought it might be nice to complete the process with a simple finishing touch to make them more attractive when I give them to family members and friends. No need to get too fancy with this step, simply cut out rounds of brown craft paper, wrapping them around the lids and tying them using white butcher’s string. Then soak green chilli into the salted water then drain and dry them well. Heat a pot add sufficient amount of water and gooseberry ,boil then well and drain set a side. Take a quart of gooseberries and scald them tender and drain them from the water through a cullender, squeeze them with a spoon. Then take a quart or three pints of new cream and six eggs, yolks and whites well beaten, and put to the cream, grate a small nutmeg into it and mix some orange-flower water and sugar and sweeten to your palate: Set all over a gentle fire and stir it until you see it of a good thickness, then take it off and cool a little, put into dishes.

Indian recipes tamil | Recipe by Abi இன்று இந்தியன் ரிசிபி தமிழில் இன்று தேன் நெல்லிக்காவை கொண்டு வந்துள்ளோம். சர்க்கரை இல்லாமலும், சுண்ணாம்பு இல்லாமலும், 1 வருடம் நீடிக்கும் நெல்லிக்காய் முரப்பாவை மிக எளிதான முறையில் செய்யலாம். நீராவியில் சமைத்த முரப்பா, ஜூசி வெல்லம் மற்றும் நெல்லிக்காய் ஜாம், நெல்லிக்காய் சட்னி, நெல்லிக்காயின் இனிப்பு ஊறுகாய், நெல்லிக்காய் ஊறுகாய், நெல்லிக்காய், நெல்லிக்காய் தோக்கு, நெல்லிக்காய் சட்னி, நெல்லிக்காய் வெல்லம் எளிதாக செய்யலாம். நெல்லிக்காய் பொடி, நெல்லிக்காய் எண்ணெய், நெல்லிக்காய் மிட்டாய் செய்து, ஒரு வருடம் முழுவதும் நெல்லிக்காய் முராப்பாவை அனுபவிக்கவும். முடி வளர எப்படி, தோல் பராமரிப்பு தீர்வு, கண்பார்வை மேம்படுத்த தீர்வு, நோய் எதிர்ப்பு சக்தியை அதிகரிப்பது, முடி உதிர்வதை தடுப்பது எப்படி, நோய் எதிர்ப்பு சக்தியை அதிகரிப்பது எப்படி, மாம்பழ முராப்பா, எலுமிச்சை ஜாம், நெல்லிக்காய் செய்வது எப்படி, செய்முறையைப் பாருங்கள். சரியான ஆம்லா முராப்பா செய்முறையைப் பகிர்ந்து கொள்ளுங்கள், மேலும் இந்தியன் ரெசிபி தமிழுக்கு Subscribe செய்ய மறக்காதீர்கள். இந்தியன் ரெசிபி தமிழ் | அபியின் செய்முறை required things: Gooseberry/Amla - 500Gram * Water- As required * Rock Sugar Candy- 500 Gram * Water - 2-3 spoon நெல்லிக்காய் - 500 கிராம் * தண்ணீர் - தேவைக்கேற்ப *கற்கண்டு  - 500 கிராம் * தண்ணீர் - 2-3 ஸ்பூன் செய்முறை: நெல்லிக்காயை இரவு முழுவதும் ஊற வைக்கவும். உலர்ந்த துணியால் அவற்றை துடைக்கவும். ஒரு பாத்திரத்தில் தண்ணீர் ஊற்றி கொதிக்க வைக்கவும். பிறகு அதில் நெல்லிக்காய் போடவும். ஒரு மூடியுடன் மூடி, 5-7 நிமிடங்கள் கொதிக்க வைக்கவும். பிறகு நெல்லிக்காய் எடுத்து முள்கரண்டியால் குத்தவும். கடாயை சூடாக்க வைத்து, அதில் சிறிது கற்கண்டு, வேகவைத்த & குத்தப்பட்ட நெல்லிக்காய் , சிறிது தண்ணீர் சேர்க்கவும். தொடர்ந்து கிளறி, மூடி வைத்து மெதுவான தீயில் 40-45 நிமிடங்கள் சமைக்கவும். ஆம்லா நிறம் மாறி சிரப் தடிமனாக மாறியதும், தீயை அணைத்து ஒரு பாத்திரத்தில் எடுக்கவும். பின் காற்று புகாத டப்பாவில் வைத்து நீண்ட நேரம் பயன்படுத்தவும். இந்த வழியில், ஜூசி ஆம்லா முராப்பா பரிமாற தயாராக இருக்கும். Recipe: Soak the gooseberries overnight. Wipe them with a dry cloth. Pour water into a pot and bring to a boil. Then add gooseberry . Cover with a lid and bring to a boil for 5-7 minutes. Then take gooseberry  and prick it with a fork. Heat a pan and add a little candy sugar, boiled & pricked gooseberry , a little water.Stir constantly, cover and cook on low heat for 40-45 minutes. When the amla color changes and the syrup thickens, turn off the heat and take out in a bowl. Then keep in an airtight container and use for a long time. This way, Juicy Amla Murappa will be ready to serve. Amla chunda recipe | With Jaggery | Indian gooseberry recipes Goes well with paratha or in any Indian lunch menu, or enjoy it with toasted papad. Detailed post: 🤍 Cup measurements : 🤍 Ingredients 10 Amla Indian gooseberry 1 cup Crushed jaggery 1 tablespoon Ginger chopped 1 teaspoon Red chilli powder Kashmiri ½ teaspoon Black pepper powder ½ teaspoon Roasted cumin seeds powder Bhunda jeera ½ teaspoon Black salt Kala namak ¼ teaspoon Asafoetida ¼ teaspoon Turmeric powder Instructions Take cleaned amla in a steamer. Steam cook for 15 to 20 minutes. Once done, let it cool down Remove the seed. Place it in a food processor. Run it in short intervals to a coarse texture. Take the grated amla in a pan, with powdered jaggery. Mix until the jaggery melts. After that, add all the spices, black salt followed by finely chopped ginger. Keep cooking until it becomes glossy and the water is absorbed, yet some liquid content is there. Switch off the flame and add lemon juice, mix well. Nellikai Thokku (Amla Pickle) #nellikaithokku #thokkurecipe #amlapickle #amlaacharrecipeinhindi Ingredients Gooseberry - 20 no Water Sesame oil - 4 tbsp Mustard seeds - 2 tsp Fenugreek seeds - 1/4 tsp Asafoetida powder - 1/2 tsp Red Chili powder - 5 tsp Salt Jaggery - 1 tsp Method: 1.Take a pot of hot water, place the Gooseberries into the pot. 2.Cook for 15 to 20 minutes and when the Gooseberries starts opening up and that's the indication that it is fully cooked. Turn off the stove and remove it from the pot and let it cool. 3.Once cooled, remove the seeds and you can cut the gooseberries into pieces. 4.Transfer the pieces to a mixer jar, if you need you can add little water and grind it into a nice puree. 5.For Thokku, add 4 tbsp of Sesame oil, 2 tsp of Mustard seeds, 1/4 tsp of Fenugreek seeds, 1/2 tsp of Hing or Asafoetida powder, 5 tsp of Red Chili powder and give it a quick stir. 6.Now, add grounded Gooseberry puree and mix it till all the ingredients are combined well. 7.Add 3 to 4 tsp of salt, it will require more salt as Gooseberries are quite savouring so we need to balance the flavour. 8.Now, crumble a tsp of Jaggery and stir it with the mixture till it is blended with the mixture. 9.Stir it till you get the dark rich brown colour. You can add more oil if you want to store it for a longer period of time. Your Nellikai Thokku is now ready. You can store and refrigerate this in a glass jar.
