Butterfly or pound your chicken thighs until they are 1/2 cm or 1/4 inch thick 2. Crush your bay leaves using a pestle and mortar, then add to a bowl with the remaining spices 3. Mince your garlic and mix with the Yoghurt, Tomato Paste, Lemon Juice, Olive oil, white vinegar and the spice mix. Stir until well mixed and then add your chicken in to the bowl and mix to ensure each piece is well coated in the marinade 4. Place your chicken in the fridge for a minimum of 12 hours so the marinade can penetrate the chicken Oven Grilled shawarma directions: 1. Slice your chicken thighs into strips about 1/2 cm or 1/4 inch thick 2. Using a metal skewer, pierce your chicken strips all along one side and slide them onto the skewer 3. With a second metal skewer, pierce the opposite end of the chicken, so that the chicken strips are suspended between both skewers 4. Line a baking sheet with foil, then place the skewers on the edge of the sheet. They should be floating above the sheet not sitting in it (you may need to use a deep baking dish instead) 5. Place your tray in the oven with your grill or broiler set to medium and cook for 3-5 minutes per side, rotating between them. Place them back in the over for 2-3 more minutes until slightly charred. Temperature of the chicken should read 74c or 165f when done. Pan Grilled directions: 1. Heat a grill pan or griddle and place a few chicken thighs in it, but don't overcrowd the pan. 2. Cook them on medium high heat, flipping them every 3 minutes until cooked through 3. Remove and slice into thin strips To make a shawarma sandwich: 1. Place a piece of bread on your work surface and slather on a couple of tablespoons of Toum or garlic sauce 2. Add your chicken pieces on top, as well as some pieces of sliced pickle 3. Add some chilli sauce to the sandwich then roll it up and seal 4. Place your sandwiches in a grill pan of griddle, and weigh them down with something heavy. Allow them to sear for 30-60 seconds per side until grill marks form.

I used topside, but this recipe will be 10 times better with something that has intra-muscular fat like ribeye, sirloin or even beef ribs 50-100g Solid Beef or lamb fat (optional, but highly recommended) Replace above with 3 Tbsp of Beef drippings or butter 1 Tomato 1 Green Chilli 6 Soft flour buns Marinade: 2 Medium Onions Zest of 1 Lemon Zest of 1 Orange 5 Tbsp White Vinegar 2 Tsp Salt 1 Tsp Pepper 1/2 Tsp Sumac 1/2 Tsp Baharat (leave it out if you don't have it) Tahini sauce: 75g (2.6 oz) Yoghurt 50g (1.8 oz) Tahina 50g (1.8 oz) Water 20g (1 Tbsp) Lemon Juice 1/4 Tsp Salt 1/4 Tsp White Pepper 1/4 Tsp Cumin 1/4 Tsp Chilli Powder (Optional) Onion and Parsley salad: 1 Red Onion 25g or small bunch of parsley 1/2 Tsp Salt 1 Tsp Sumac 1 Tbsp Lemon Juice To prepare the beef: 1- Slice your beef into strips, about 5-7mm wide and thick, and 3-6 cm long. Make sure you are slicing against the grain at all times (see link in references), to ensure the beef is tender 2- Add the marinade ingredients into a blender, and blend on high until it forms a thick liquid 3- Place the sliced meat in the pot you'll be cooking in, and pour on the marinade. Massage it into the meat until well coated 4- Wash and add the Tomato and Green chilli, then let this marinade for 2-3 hours To cook the beef: 1- Place your pot on the stove over high heat, and bring this to a boil 2- Once boiling, add in your solid animal fat, and turn the heat to medium low. Cover with a lid and cook until tender. Topside will take about 1.5-2 hours, anything softer will cook quicker 3- When the desired tenderness is achieved, mash the tomato and chilli, and if using beef dripping or butter add it now 4- Cook with the lid off for about 15 minutes until the meat is nicely browned and fatty To make the salads (I recommend making extra parsley and onion for topping): 1- Slice your onion into thin strips, then mix it with the salt, and sumac. Massage them in then let this sit for 10-15 minutes 2- Roughly chop the parsley into small pieces 3- Mix the lemon juice with the onion and set aside 4- To make the tahini, combine all the ingredients together in a bowl or blender and mix until smooth To serve the shawarma: 1- Add the onions and parsley to the shawarma, as well as 2 Tbsp of the tahini sauce 2- Mix thoroughly until well combined 3- Toast your buns (or don't) then add tahini sauce and a few spoons of the shawarma Serve and enjoy

Today is the day of the recipe that you all have been asking for and it's the kind of `bereketli` recipe that comes in plenty when it does — I hope you all watched the last video for that bereket reference hah! 😘 It's of course, the legendary, the one and only chicken döner also known as shawarma, gyro, or doner kebab, and I gotta tell you, it turned out PERFECT! And of course, we had to come back to the studio for this one because I know Yağız and Burak would particularly not wanna miss out on it 🤓 Join us in today's episode where we made the classic wrap style chicken döner, along with a delicious rice bowl with chickpeas which is something us Turks consider to be a classic to eat döner alongside with, and don't forget to let us know how your recipes turned out in the comment section below! 🥰 Check out our Etsy Shop: 🤍 JOIN: 🤍 SUBSCRIBE: 🤍 Chicken döner 2 boneless chicken breasts, sliced horizontally (preferably skin on) 3 boneless chicken thighs, (preferably skin on) 1 onion 7 tablespoons tomato purée (you can use a tea spoon tomato paste and a teaspoon pepper paste) 2 tablespoons yogurt (alternatively, milk or kefir) 1 heaped tablespoon butter (if you are using skinless chicken) 2 tablespoons oregano 1 teaspoon cumin 1 teaspoon black pepper 1 teaspoon salt Döner wrap (makes 2 wraps) 1 tablespoon pepper paste 1/2 teaspoon butter 4 lavash breads 4 handfuls of lettuce 4-5 pickled peppers 1 potato, fried (optional) For the pilav (Rice) 2 cups rice 3 cups hot water 2 tablespoons butter 2 tablespoons olive oil 1 teaspoon salt 200 gr tin of chickpeas • For the döner marinade, add the onion in a food processor and pulse until it becomes puree. • Sieve the onion juice in a large bowl. • Add the yogurt, tomato puree, butter, cumin, oregano, black pepper, salt and mix well. • Add in the chicken and give it a last mix. • If you have time sit the mixture in the refrigerator about 2-3 hours. • Unroll a big piece of baking paper on the counter and lay over the chicken on it. Place the first layer vertical and the second one lateral. • Wrap the chicken tightly and twist both ends in opposite directions and freeze it overnight. • To cook the döner, take it out from the freezer and slice it thinly and carefully. As you move to the center of it, it gets harder to slice. At this stage, you can rotate the döner and slice the other sides. • Heat a wide pan and cover the bottom with butter. Place the döner slices in it and cook each sides for two minutes. • For the döner wrap, when the cooking is done, add some hot water, tomato paste and butter to the pan. While mixing, scrape the bottom of the pan as well to have all the flavor and goodness. Lay over two lavash breads on sauce one by one. Place the one bread on the other and spread more sauce if you like to. Put the döner, lettuce, pepper pickles, and fried potatoes on the bread. Wrap and your chicken döner is ready! • To make the pilav, rinse the rice in a sieve under warm water and drain well. • Heat the butter and olive oil in a shallow pot. • Add the rice and salt. Sauté for 3 minutes until all rice pieces become transparent. • Pour the hot water in the pot and put the lid on. Bring it to boil. Then simmer for 12 minutes. Don’t stir while it is cooking. • Add the chickpeas in the last 3 minutes of cooking. • To be sure if it is cooked, make a hole in the centre of it. If you don’t see any excess water and rice doesn’t fall back, it is time to turn off the heat. • Cover with a kitchen cloth and let it rest for another 10-15 minutes. • For the döner with pilav, place the pilav on a big dish and pour some pickle juice to your taste. Shawarma is a popular middle eastern dish you will often see as street food. It normally consists of lamb or chicken meat that’s been cut thinly and stacked on a vertical rotisserie for slow cooking. Because the outside cooks first, you get the best umami flavours from the browned meat pieces. They are then shaved off and rolled inside a wrap (pita bread) filled with a sauce and vegetables. It is one of the world’s most popular street food, and now you can make it at home quite easily. This version is made with chicken that’s thinly cut, (I like to half freeze the thighs for easier slicing). It’s marinated in yogurt and spices. The chicken is then broiled or grilled under hot heat until you get that similar rotisserie effect resulting in an intense flavour. The cooking smell alone is insane! This dish goes well with fries, so make a batch! Chicken shawarma For pita bread Ingredients: Water 1 cup (Luke warm) Sugar 2 tsp Active dry yeast 1.5 tsp Refined Flour (maida) 375 gm Salt 1.5 tsp Baking powder ½ tsp Methods: In a bowl, add Luke warm water and sugar, mix well until the sugar dissolves, make sure the water is not hot, once the sugar dissolves, add yeast and mix well. Now, in a sieve, add flour, salt & baking powder, sift them in the yeast and water mixture, mix them well until the ingredients combine well and it becomes sticky dough, now transfer it over a platform, make sure to dust the platform with dry refined four, now knead well until the dough is smooth and soft, take a bowl and grease it with oil and transfer the dough in the bowl, cover it with a damp cloth and rest in warm place for an hour to prove (increase in size of the dough). By the time the dough proves you can make other components of the shawarma. After proving, divide the dough in 8-10 equal size dough balls, take the dough ball and start to tuck inwards to make a smooth round ball, cover those dough balls with a damp cloth and rest it for 10-15 minutes. After the second resting, take the dough ball and coat with dry flour, flatten with hands and further use a rolling pin to roll into a thin chapati. Use flour if required. Set a tawa and cook the chapati/pita bread over a hot tawa on both the sides until golden spots appear, use a napkin and press the pita bread gently to fluff up the bread while cooking. Cook the all the pita bread in same way, keep aside until you use it for making shawarma. You can alter the size of pita bread according to your preference. For garlic tom Ingredients: Garlic 1/4th cup Lemon juice 2 tbsp Salt to taste Ice cubes 4 nos. Sunflower oil/Canola oil 1.5 cups Methods: Add the peeled garlic cloves, lemon juice, salt and ice cubes, in the blender, blend, and at the same time add oil gradually in single stream, blend until the ingredients are well incorporated and it becomes thick like a spread. For garlic curd dip Ingredients: Curd 1 cup (thoroughly whised) Mayonnaise ½ cup Lemon juice 1 tsp Powdered sugar ½ tsp Salt & black pepper powder a pinch Garlic 2 cloves For pickle Ingredients: Beetroot 1 cup (batons) Carrots 1 cup Green chillies 8-10 Nos. Salt 1 tsp Water ½ cup Vinegar 1 cup Salt 1/2 tsp Sugar 5 tbsp For chicken Ingredients: Boneless chicken 1 kg (thigh & breast) Salt to taste Oil 2 tbsp Garlic paste 2 tbsp Lemon juice 1 tbsp Red chilli powder 2 tsp Coriander powder 1 tbsp Cumin powder 1 tbsp Black pepper powder 1 tsp Cardamom powder a pinch Cinnamon powder a pinch Curd 4 tbsp Oil (for grilling) Methods: Wash the boneless chicken well, if you're preferring chicken breast, then slice the breast thinly in two or three section, further flatten with the back of the knife, if you're choosing to go with thigh just simply flatten them with back of the knife. Sprinkle salt to taste and apply it to the chicken, rest it for 10-15 minutes. Now, add the remaining marinade ingredients in a separate mixing bowl, whisk well to ensure no lumps, further add the salt applied chicken and mix well, marinade the chicken for a couple of hours, if you prefer your chicken to be more flavourful, then marinade for around 24 hours. Once the chicken is marinated, set a pan on high heat, add oil and cook the marinated chicken on both sides until cooked and tender. Make sure the pan is hot. Tip: if you're using breast and thigh both, make sure to cook them separately, as the thigh takes longer to cook than breast. Once cooked rest for 2 minutes and slice the chicken in thin strips. You can also bake them in oven, like the shawarma venders do on a shawarma rolling machine, simply take a big size potato and trim the base of potato to make like a stand, insert a skewer in the potato and then skew the marinated chicken in the skewer, bake the chicken in a preheated oven at 230 for 10-15 minutes. Once baked and the chicken is cooked and tender, slice in thin strips like the shawarma vendors do, keep aside to make shawarma. Assembly Ingredients: Pita bread Garlic tom/ garlic curd dip Pickled carrots & beets Fried potatoes/french fries Lettuce leaves Sriracha/hot sauce Cooked shredded chicken Methods: Before assembling lightly heat the pita bread on direct flame. Now, as the pita bread is warm, spread garlic tom on pita bread evenly, place the lettuce leaves, grilled and shredded chicken, pickled carrots & beets, fries and some sriracha sauce, roll and your good to go. This Easy, Healthy CHICKEN SHAWARMA recipe is incredibly tender and scrumptious! It’s a hit every time we serve this flavorful dish. SO much better than takeout. Save this video; FULL Recipe Below 👇🏼 (For Printable Recipe Card + Notes: 🤍 For the Dry Rub: 2 tsp paprika or smoked paprika 2 tsp cumin 1 tsp garlic powder 1 tsp onion powder 1 tsp allspice 1 tsp ground tumeric 1 tsp kosher salt 1/4 tsp ground cinnamon 1/4 tsp freshly ground black pepper 1/8 tsp cayenne 2 TB extra virgin olive oil For the Chicken: 3 lb boneless, skinless chicken thighs* 1 TB extra virgin olive oil Combine Spices: In a large bowl, whisk together all the spices to combine well. Add 2 TB olive oil and mix into a paste. Set aside. Dry and Marinade Chicken: Thoroughly towel-dry the boneless, skinless chicken thighs. Slice each thigh into quarters, and coat with 1 TB olive oil. Add chicken into the bowl with marinade. Use tongs or clean hands to thoroughly coat all pieces of chicken evenly, on all sides. Cover tightly with cling wrap and chill overnight (at least 3-4 hours.) Preheat and Cook: Let chicken come to room temp as you preheat oven to 400F, with rack on upper middle position. Once oven is heated, place chicken pieces in a single layer on a large, foil-lined baking sheet. Take care not to overlap or overcrowd the pieces. Roast 15 min or until just cooked. Slice and Broil: Let chicken cool enough to handle. Slice all chicken into thin slices. Place back onto the baking sheet in an even layer. Broil on high for 7-10 minutes or until edges are nicely browned. Serve immediately with pita bread, basmati rice, or hummus.
